i have heard apple uses webkit or something, not sure how it really works. im new to most of this so anything helps
Onion Browser and Orbot are recommended by Tor Project. They don’t develop, support or maintain them, but they recognize them as the best among many bad choices. This is due to Apple’s policies which force all browsers to use Webkit, which cannot be tuned for the type of anonymity required by many Tor users.
If you don’t need Tor for anything particularly sensitive, you can use these. For anything else, consider Tor Browser on a regular computer if you have access to one.
Using TOR on iOS is kind of pointless.
Using TOR on a mobile device is definitely not advisable but if you’re going to do it use an Android.
Personally I’d only use TOR via Tails OS

I‘m using a free WiFi with the Orbot VPN addon on iOS right now. Because my normal VPN don’t work in this network. TOR works fine.

It displays webpages inside the browser window. While Tor Browser ships with Firefox’es web rendering engine, which they can tune and modify deeply, on iOS browsers need to use the unmodified Webkit engine that ships with the OS. I don’t know much about how it works, but it’s made by Apple and not with the needs of an anonymity network in mind.

Not sure what you mean by this? Pretty much all apps and websites use encryption
Why do you want to “stay encrypted”? You should use PGP to communicate. A Linux system try browse on and maybe some kind of VM.
