I live in the UK and my grandma lives in Russia, she would like to use a vpn but isn’t very good with tech / doesn’t have the means to pay for it. So as the title suggests, would it be fine if I buy a subscription under my name and pay in GBP while she uses it from Russia? Or are there any potential issues with that. Thank you

We do not in any way restrict you to using Surfshark only in the country in which you purchased it in, especially given that using a VPN for travel is one of the most common use cases. In other words, your grandma will be able to use it even if you bought the subscription while in the UK.
How about choosing USA to pay, to avoid the UK VAT charge?
