Edit: According to some tests I found on reddit it looks like Surfshark is pretty cheap and has decent speed so decided to go with it. Found a spreadsheet that some guy tested the speeds of popular VPNs and has some general info that helped me choose. ProtonVPN or AirVPN. Both have port forwarding, but Proton is faster.

There is only one vpn that has been proven in a court that they keep no data after it’s passed through their servers. PIA Use PIA in conjunction with DNS servers 1.1.1.1 - 1.0.0.1 and nothing you do is kept or left behind.

I have used Mullvad for 3 years. It is completely anonymous and does not require your personal information. I only pay with crypto, but there is also an option to pay with PayPal, among others. Mullvad does not keep logs. I use it for everything, including torrenting. For anyone wondering, it no longer supports port forwarding, but the fastest download speed I observed was up to 50 MB/s.
