If you want free, then install Outline (free, one click install) on a Oracle Free Tier VPS and use V2Ray as client.
Setup VPN only on apps that need VPN, not on the phone in general.

Chose a server
Create
Name whatever
Bughost: bing.com
Then click the both tiny QR icons (don’t bother typing, no need)
…and try with whatismyipaddress.com
I think it works for 7 days. So when in China get a new one bore this expires. Servers do not allow torrent.
