Another way of looking at it is company culture and the viability of the product. Microsoft is a money driven company and the only thing better than money is data. If they give you a service you should always expect that one of the two will be the “price”. Microsoft is neither benevolent nor working for the good of the people.
How would you notice that your data is being collected? It’s not like they’re going to be transparent about that unless forced to legally.
You clearly don’t understand how any of that stuff works… How on earth would you notice your data being collected? You tunnel literally all your internet activity through someone else’s server. If the VPN is free, 100% your data is being collected. And even with a paid VPN you would never know.

I think it’s pretty clear that this is not about open source software but services that need an infrastructure to run. If you can use these services for free and there are no other means of income that balance it out, the user’s data is the source of income.
FOSS is not strictly costless. ProtonVPN is FOSS but you still have to pay for it.
